DiverXO occupies a fantastical dining room inside the NH Eurobuilding hotel. From the first amuse-bouche, it is clear this is not a conventional restaurant — it is a stage where chef Dabiz Muñoz directs every act.
The tasting menu, billed as a 'culinary journey,' moves from delicate Asian-leaning bites to bold Iberian flavours, all served on hand-painted plates and sculptural pieces. Service is energetic and unusually personal: dishes are explained like short stories.
Reservations are notoriously hard to secure and the bill is steep, but for a once-in-a-while occasion it remains one of the most distinctive tasting menus in Spain.
